Checking in …

Just a quick note to let everyone know that I haven’t fallen off the face of the planet just yet. This is “sugaring season”, and the sap has been flowing these past ten days or so. It appears that we will have another few days ahead of us, assuming the trees aren’t ready to awaken from the dormancy of winter. We shall see.

  1. We have finished about 28 gallons of syrup, which means we have processed just under 1000 gallons of sap. We have another half horse trough full of sap (150 gallons or so), but it is “aging” and may not all be usable by the time it makes it into the evaporator. We did collect today, but the quality of sap is definitely end-season — beginning to yellow and producing a markedly darker syrup than we usually get. I think this year’s season is over. If we get 30 gallons of sap, that will just be half of last year’s production; 2006 was a wild sugaring year; 2007 is a little more normal!
